roasted pineapple

  • 1 pineapple, peeled and de-eyed
  • 1/4 cup sugar / syrup
  • 2 tsp cinnamon
  • water, juice, or a splash of wine or rum, optional, to loosen up the marinade

  • mix the marinade

  • baste and roast at 190C for 15 mins
  • repeat
  • repeat

  • vanilla?
  • salt
  • sprinkle with cinnamon sugar to serve?
