Tortang Talong

  1. roast eggplant until blackened
  2. slice like a fan
  3. add starch and a pinch of tumeric
  4. fry eggplant
  5. beat egg with salt, pepper
  6. pour over eggplant
  7. fry
  8. flip and fry some more
  9. add optional ground pork, fish sauce, soy sauce, minced garlic, diced onion
  10. serve with rice

  11. traditionally served with banana ketchup

  12. air fryer might also work
