Ingredients:
- 18g MSG
- 22.5g white pepper
- 22g black pepper
- 12g fine flake salt
- 3g sage
- 3g ground coriander
- 3g ginger powder
- 3g cayenne
- 0.75g marjoram
- 0.75g rosemary
- 0.75g summer savoury
- 0.56g garlic powder
- 0.56g ground star anise
- 0.38g ground clove
Breading mix:
- 21g spice mix
- 36g fine flake salt
- 300g cake flour
- 25g egg white powder
- 25g dry milk powder
165ºC 5 pounds pressure 10 - 12 minutes
Method: If brining add 2 tsp of spice mix to 4 cups cold water and soak chicken for 2-3 hours. Bring a pot of hot oil (canola, vegetable oil, or shortening) to 350ºF. Mix the spice mix with the cake (or pastry) flour. Mix together 1 egg and two cups of milk, for an egg wash. Dip the chicken in the egg wash, then dredge it in the flour, coating the chicken well. Carefully drop the dredged chicken in the hot oil and fry for 11-15 minutes or until chicken registers 165ºF on an instant read thermometer.
