Eggplant Parmesan (Parmigiana di Melanzane)

ingredients

  • passata (or marinara sauce)
  • eggplant slices, baked with olive oil and some salt
  • basil leaves
  • cheese
  • salt and pepper
  • optional breadcrumbs
  • optional herbs in the sauce

directions

  1. layer sauce, basil, eggplant, cheese
  2. repeat until container is full
  3. optionally add breadcrumbs
  4. bake at 170c for 30 mins
