Eggplant Parmesan (Parmigiana di Melanzane)
ingredients
- passata (or marinara sauce)
- eggplant slices, baked with olive oil and some salt
- basil leaves
- cheese
- salt and pepper
- optional breadcrumbs
- optional herbs in the sauce
directions
- layer sauce, basil, eggplant, cheese
- repeat until container is full
- optionally add breadcrumbs
- bake at 170c for 30 mins
