roasted pineapple

ingredients

  • 1 pineapple, peeled and de-eyed
  • 1/4 cup sugar / syrup
  • 2 tsp cinnamon
  • water, juice, or a splash of wine or rum, optional, to loosen up the marinade

directions

  1. mix the marinade
  2. baste and roast at 190C for 15 mins
  3. repeat
  4. repeat
