Tortang Talong

directions

  1. roast eggplant until blackened
  2. slice like a fan
  3. add starch and a pinch of tumeric
  4. fry eggplant
  5. beat egg with salt, pepper
  6. pour over eggplant
  7. fry
  8. flip and fry some more
  9. add optional ground pork, fish sauce, soy sauce, minced garlic, diced onion
  10. serve with rice

  • traditionally served with banana ketchup
  • air fryer might also work
  • works with dynamite
